15-minute meal prep for workdays (thermos included)

You don’t have a Sunday cooking show. You have 15 minutes, a fridge, and a Monday desk with no microwave (or a line for it). Minimal kit: 3 lunch boxes, 1 thermos, 1 base, 3 flavors. Goal: a lunch that lasts until evening. Not a chef recipe.

Why 15 minutes is enough

Same rule: protein + carb + vegetable already in the box. One base, three dressings. If every box tastes identical, you’ll bail on Wednesday for a sandwich. No Sunday? Don’t cook. Use quick-pick rules at the cafeteria, corner store, or sandwich shop. Meal prep is optional. The 3-part plate is not.

The minimal kit

Food thermos (16–24 oz): worth it with no microwave. Heat in the morning, eat hot at 1. Compartment boxes: dressing on the side, or Wednesday is mush. Skip: 12-function gadget, 12 Instagram spices, leaky bags.

The only useful purchase: a food thermos plus 3 boxes that don’t leak. One kit, two years of weekday lunches. Our picks: the Hydro Flask food thermos and Pyrex glass lunch boxes.

15 minutes, minute by minute

  • 0–5 carb: microwave rice, leftover pasta, or cooked potatoes. Split into 3 boxes.
  • 5–10 protein: rotisserie chicken, 2 cans chickpeas rinsed, 6 hard-boiled eggs, or a quick pan of chicken. Divide.
  • 10–15 vegetable + 3 flavors: frozen mixed veg or cucumber/tomato/bagged salad. Dressings: (1) lemon + herbs + plain yogurt (2) canned tomato + olive oil (3) mild curry or soy + sesame. Dressing on the side. Fridge. Done.

3 lunch-box templates

  1. Hot thermos: rice + chicken + vegetables, lemon sauce on the side.
  2. Cold: chickpeas + rice + cucumber + yogurt-lemon. No microwave.
  3. Mixed: pasta + tuna + tomato.

Target: about $4–6 a lunch, discount grocery.

3 mistakes that wreck Wednesday

Same seasoning in every box · dressing mixed in for 5 days · carb only (plain rice/pasta).

If you truly don’t have 15 minutes

Cafeteria: protein + carb + one vegetable. Dessert or bread. Corner store: Greek yogurt + fruit + nuts. Sandwich: protein you can see + vegetables.
